Ingredients:

  • 1 lb medium shrimp, peeled and deveined
  • Salt and pepper
  • 2 tablespoons olive oil
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup cognac
  • 1/2 cup chicken or seafood broth
  • 1/4 cup freshly squeezed lemon juice
  • 1/4 cup chopped parsley
  • 1/4 cup chopped chives
  • 1 lb linguine

Instructions:

  1. Season the shrimp with salt and pepper.
  2. Cook the linguine in a pot of boiling salted water until al dente. Drain and set aside.
  3. In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat.
  4. Add the garlic and red pepper flakes and cook for 1 minute until fragrant.
  5. Add the shrimp and cook until pink, about 2-3 minutes per side.
  6. Remove the shrimp from the skillet and set aside.
  7. Add the cognac to the skillet and deglaze, stirring for about 30 seconds.
  8. Add the chicken or seafood broth and lemon juice and simmer until slightly thickened, about 5 minutes.
  9. Stir in the remaining tablespoon of butter, chopped parsley, and chopped chives.
  10. Add the shrimp back into the skillet and toss to coat with the sauce.
  11. Serve the shrimp scampi over the linguine, garnished with additional parsley and chives, if desired.
