1 whole chicken, cut into 8 pieces
1/2 lb bacon, chopped
1 onion, diced
2 carrots, diced
2 garlic cloves, minced
2 tbsp tomato paste
2 cups chicken broth
1 cup red wine
1/4 cup cognac
2 sprigs fresh thyme
2 bay leaves
1 lb mushrooms, sliced
2 tbsp unsalted butter
