Shrimp Scampi with Cognac Recipe
Ingredients:
- 1 lb medium shrimp, peeled and deveined
- Salt and pepper
- 2 tablespoons olive oil
- 3 tablespoons butter
- 3 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- 1/4 cup cognac
- 1/2 cup chicken or seafood broth
- 1/4 cup freshly squeezed lemon juice
- 1/4 cup chopped parsley
- 1/4 cup chopped chives
- 1 lb linguine
Instructions:
- Season the shrimp with salt and pepper.
- Cook the linguine in a pot of boiling salted water until al dente. Drain and set aside.
- In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat.
- Add the garlic and red pepper flakes and cook for 1 minute until fragrant.
- Add the shrimp and cook until pink, about 2-3 minutes per side.
- Remove the shrimp from the skillet and set aside.
- Add the cognac to the skillet and deglaze, stirring for about 30 seconds.
