Cognac Eau-de-Vie is the clear, potent spirit distilled from fermented grape juice in the Cognac region of France, forming the base of cognac before it matures in oak barrels. The term “eau-de-vie,” meaning “water of life” in French, refers broadly to any distilled spirit made from fermented fruit, though in Cognac, it specifically denotes the product of double distillation in Charentais copper stills, typically reaching 70% alcohol. Made chiefly from Ugni Blanc grapes, Cognac Eau-de-Vie varies in character depending on its origin within the six crus—Grande Champagne yielding floral notes, Borderies offering nutty tones, and Fins Bois providing robust flavors. After distillation, this unaged “heart” of the spirit is aged for at least two years in oak, transforming into the amber-hued, complex cognac, though eau-de-vie itself represents the pure, unrefined essence of the fruit and distillation process. Outside Cognac, eau-de-vie can also be made from other fruits like apples or pears, but in this context, it’s the soul of cognac production.
