1 pound of chicken livers, trimmed
1 large onion, finely chopped
2 cloves of garlic, minced
1/2 cup of unsalted butter, divided
1/4 cup of dry white wine
2 tablespoons of heavy cream
1/2 teaspoon of dried thyme
1/2 teaspoon of dried sage
2 tablespoons of cognac
Salt and black pepper to taste
Baguette or crackers for serving
Instructions:

In a large skillet over medium-high heat, melt 1/4 cup of butter. Add the chopped onion and garlic and sauté until softened, about 5 minutes.

Add the chicken livers to the skillet and cook until they are browned on the outside and cooked through, about 5-7 minutes.

Add the white wine, thyme, sage, and cognac to the skillet and cook until the liquid is reduced by half, about 2-3 minutes.
