1 pound of chicken livers, trimmed
1 large onion, finely chopped
2 cloves of garlic, minced
1/2 cup of unsalted butter, divided
1/4 cup of dry white wine
2 tablespoons of heavy cream
1/2 teaspoon of dried thyme
1/2 teaspoon of dried sage
2 tablespoons of cognac
Salt and black pepper to taste
Baguette or crackers for serving

In a large skillet over medium-high heat, melt 1/4 cup of butter. Add the chopped onion and garlic and sauté until softened, about 5 minutes.

Add the chicken livers to the skillet and cook until they are browned on the outside and cooked through, about 5-7 minutes.

Add the white wine, thyme, sage, and cognac to the skillet and cook until the liquid is reduced by half, about 2-3 minutes.

Remove the skillet from the heat and let the mixture cool slightly.

Transfer the mixture to a food processor and pulse until smooth.

Add the remaining 1/4 cup of butter and heavy cream to the food processor and pulse until the mixture is creamy and smooth.

Season the pâté with salt and black pepper to taste.

Transfer the pâté to a serving dish and chill in the refrigerator for at least an hour.

Serve the pâté with baguette slices or crackers.
