Rastignac Cognac is a relatively new addition to the world of cognac, but its founders, David and Julien Pannaud, have quickly made a name for themselves in the industry. In 2008, they purchased the 15th century Château des Plassons in Bors de Montmoreau and started producing their own cognacs. The chateau is located in the Bons Bois area of Cognac and is surrounded by 120 hectares of vineyards. Rastignac cognacs are made by blending eaux-de-vie from the Château vineyards as well as surrounding appellations like Grande Champagne, Petite Champagne, Borderies, and Fins Bois.

Rastignac takes great care in crafting their cognacs, using traditional methods that have been passed down through the generations. They harvest their grapes by hand and distill the eaux-de-vie on-site, ensuring that every step of the process is carefully controlled. Their cognacs are aged in French oak barrels for several years in damp cellars, which allow the flavors to develop slowly over time.

Rastignac has a major focus on the Chinese and Hong Kong markets. While their cognacs are available in North America and Europe, the Rastignac have made a concerted effort to cater to Chinese and Hong Kong consumers. This approach has paid off, as Rastignac cognacs have gained a strong following in these regions.

Rastignac produces a range of cognacs to suit every taste and budget. Their VSOP is a classic expression of the style, with notes of vanilla, honey, and dried fruit. For those looking for something a bit more complex, their XO is a rich and full-bodied cognac with notes of chocolate, spice, and tobacco. Finally, for the true connoisseur, Rastignac offers a range of vintage cognacs that showcase the unique flavors of specific harvest years.
