Ingredients:

  • 4 boneless beef steaks (8 oz. each), 1 1/2 inches thick
  • 2 tablespoons black peppercorns, coarsely crushed
  • Salt to taste
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1/2 cup Cognac
  • 1/2 cup heavy cream

Directions:

  1. Preheat the oven to 400°F.
  2. Season the steaks with salt and coat them with the crushed peppercorns, pressing them into the meat.
