VSOP is a quality grade in Cognac, standing for “Very Superior Old Pale”. The term refers to Cognacs that have been aged for a minimum of four years, with the youngest eau-de-vie in the blend having been aged for at least two years in oak casks. VSOP Cognacs tend to have a richer, more complex flavor profile compared to VS (Very Special) Cognacs, which are aged for a minimum of two years.
The longer aging period in oak barrels allows for more interaction between the spirit and the wood, resulting in a darker color and a smoother, more refined taste. VSOP Cognacs are often used in cocktails or served neat as a high-quality sipping spirit.
