Salignac V.S.
Salignac V.S. was founded in 1809 in Jarnac France by Louis Salignac and is owned by the Courvoisier brand. Salignac is an unique V.S. in that the cognacs are blended before they are aged. According to Salignac “Most cognacs are blended or as we French say, “Married” after they are aged. But we at Salignac, we marry our young cognacs before ageing. Their years of intermingling in oaken casks allow time to perform its maturing miracle.”
Salignac’s owner, Courvoisier is a cognac house founded in 1835 by Emile Courvoisier and is famous for its wide range of quality cognacs. The Courvoisier Château is located in Jarnac, France on the banks of the Charente River about ten miles east of Cognac. Courvoisier cognac is said to have been the favorite drink of British novelist Charles Dickens. Courvoisier is owned by Japanese spirits conglomerate Beam Suntory.

Price
Salignac V.S is priced at around 25-30% less than the price of Courvoisier V.S.
Alcohol: 40% (80 proof)
Age: Salignac is aged at least two years in French oak barrels.
The Bottle/Label
Salignac V.S. in packaged in a a bell shaped bottle similar to the Courvoisier bottle but without the iconic Napoleon silhouette logo on the label and on the Napoleon medallion at the base of the neck. The Salignac V.S. label notes “Maison Fondee en 1809” and is “signed” Louis Salignac. The medallion at the base of the neck states “Coganc” and “V.S.” with a small gold heraldic eagle between the words.
The Color
Caramel, perhaps coloring added.
The Nose (Nez)
Vanilla, oak and raisins.
Mouth (En Bouche)
Caramel candy and grape.
Finish
Short finish of soft spice.
Overall
Salignac V.S. has been compared to Hennessy V.S. Both cognacs are young examples of V.S. cognacs in which the unaged eaux-de-vie flavors are more apparent than in older V.S. and V.S.O.P. cognacs. Given the lack of complexity of Salignac V.S., it is better suited to mixing. For the cost conscious this is a good quality product and can probably be substituted almost unnoticed for Hennessy in many cognac cocktails.
